Chef says people have been ordering steak wrong

A head chef has warned that the majority of people are ordering their steak wrong.

Opinions have long since been divided over how cooked you should have your steak, with some preferring it rare and others well done. But in an effort to help the UK learn everything there is to know about steak, head chef Stevie Cheape and the team at Campbells Meat have created an extensive guide to all things steak.

The guide includes information about the different cuts, how to cook each type of steak, how to make steak sauces and their favourite steak sides.

Stevie said: "People may not be aware of everything there is to know about steak, there’s a lot to know, which is why they’re ordering it wrong. But there’s no need to get steak wrong, with our guide to steak we’re helping educate people on everything they need to know about steak.

"Whether you want to know the best steak cuts, how to order your steak or even cook it yourself from home, and our recommendations for accompaniments, it’s all covered here.

“I recommend having a look at an image of the different stages of cooking a steak, from blue to well done. Once you’ve done that you’ll know exactly how to order your steak to your liking next time you’re out for a meal, or if you’re cooking it yourself at home.

“My favourite steak cut is ribeye because there is so much flavour, there is a good amount of fat, which isn’t always for everyone but ribeye has the right amount. So next time you’re buying a premium steak cut, try this for a delicious meal.”

In his blog post, Steve said generally, you want to aim for medium/rare to Medium, as that allows for the steak to be cooked through without it becoming overcooked where it may run the risk of becoming chewy. However, people do have personal tastes and preferences and they can all be enjoyed.

Steaks are cooked to the following descriptions:

  • Blue: Not cooked in the middle, seared on the outside
  • Rare: Very pink in the middle
  • Medium/Rare: Cooked but still quite pink in the middle
  • Medium: Cooked throughout and only slightly pink in the middle
  • Medium/Well Done: Cooked throughout, only the slightest hint of pink
  • Well Done: Cooked throughout, not pink at all

A new study found that 50% of Brits prefer their steak to be cooked a different way to how they order when in public, suggesting that their steak orders may all be for show. The study, conducted by online butchers Campbells Meat, found that those who order it ‘well done’ actually order it correctly, with 89% choosing well done as their preferred steak from the images.

The survey found that 27% order their steak medium rare, with medium following close second at 22.9%. But just 2.9% of the UK are daring enough to try their steak blue.
